Satake Sword Smith Santoku Japanese Knife - 17 cm - Versatile Kitchen Master

The Satake Sword Smith Santoku Japanese kitchen knife is a real all-rounder in the kitchen, a perfect choice for chopping vegetables and slicing both meat and fish. The characteristic recurved edge makes chopping with a rocking motion easier, whilst the broad blade offers a handy aid for scooping up and transferring your chopped ingredients with ease. The comfortable, raised handle ensures that your fingers never touch the chopping board or the food, allowing you to use it with maximum safety and confidence whilst cooking.

The santoku (三徳) knife originates from Japan, dating back to the Showa era (1926-1989). Changing dietary habits, increased red meat consumption, and the rise of Western cuisine necessitated the adaptation of Japanese kitchen knives. The direct predecessor of the santoku knife was the bunka knife, which was born from combining the characteristics of the gyuto (meat) and nakiri (vegetable) knives.

The name "santoku" refers to the knife's three main areas of use, for which it is often called the "knife of three virtues":

  • Slicing: The santoku knife is excellent for slicing meats, fish, and vegetables thinly and evenly. The ideal blade length, usually between 15-18 cm, is a perfect fit for most ingredients.
  • Dicing: The straight edge of the santoku blade allows for exceptionally precise dicing, whether it's vegetables or other ingredients.
  • Chopping: The special shape and optimal weight of the blade significantly facilitate the quick and efficient chopping of vegetables and herbs.

The popularity of the santoku knife spread worldwide at the end of the 20th century, and today it has become one of the fundamental and most favoured knife types in modern kitchens. The Satake Sword Smith Santoku represents Japanese precision and quality, a reliable companion for everyday cooking.
