During Japanese whetstone sharpening, the stones are soaked in water before use. While sharpening, the fine particles detaching from the stone mix with water to create a slurry on the surface—this slurry performs the precise and gentle material removal.

How to use the stone for perfect results?

  1. Soaking: Before use, submerge the stone in clean water for about 10-15 minutes until bubbles stop appearing.
  2. Stability: Place the stone on the non-slip holder to prevent accidents.
  3. Sharpening: Hold the knife at the correct angle (usually around 15 degrees for Japanese knives) and slide the blade across the #280 side with smooth, steady strokes to remove damage, then use the #1000 side for refining. Keep adding water to the surface of the stone during the process!
