The Satake Satoru Gyuto is an exceptionally versatile Japanese kitchen knife that's an indispensable tool for both amateur and professional cooks. This 21 cm chef's knife is ideal for the precise cutting of vegetables, fruit, meat, and fish. Thanks to its pointed design, it can also handle various filleting tasks, such as boning chicken breasts, separating pork and beef from the bone, and filleting smaller fish (although a dedicated filleting knife will make the job even easier). The optimal blade length allows for easier control and the cutting of even larger surfaces. A good quality gyuto, or chef's knife, is the "heart of the kitchen".  

The origin of the gyuto (牛刀) knife can be traced back to the Meiji era (1868-1912), when Japan opened its doors to Western culture. It was at this time that beef consumption also became widespread in the country, and a knife suitable for processing this type of meat became necessary. The gyuto was designed based on the Western-style chef's knife, but with the thinner blade and sharper tip characteristic of Japanese knives.

The word gyuto means "cow sword" and was originally developed for this very purpose. However, it soon became apparent that the gyuto was an extremely versatile tool that could also be excellently applied to other kitchen tasks.
