The Satake FAX-38 Santoku knife is an exceptionally versatile 18 cm kitchen knife that's the perfect companion for everyday cooking. It's ideal for chopping vegetables and slicing both meat and fish. The blade is made from FAX-38 premium powder metallurgy steel, manufactured by the renowned Nachi company. This steel boasts outstanding hardness and excellent edge retention thanks to its high purity, fine grain structure, and precise alloying. The santoku (三徳) knife, whose name means "three virtues" (cutting, chopping, slicing), originated in Japan during the Showa era (1926-1989) as a response to changing dietary habits. Its direct predecessor was the bunka knife.
